# Allergens in döner

A döner counter is a short line with a long allergen list. Wheat bread, yogurt sauce, sesame seed, feta, and a shared knife can sit in one order. None of that is hidden if you ask; all of it is easy to miss if you treat "döner" as a single food.

This page does not publish recipes. It maps the questions that actually matter: what is in the named item, what else that kitchen uses, and whether staff can speak to cross-contact. Operator menus vary. A Döner Haus claim does not describe GDK; a Berlin shop does not describe a California wrap.

## Four problems that look like one sandwich

Germany's [meat guidelines](https://www.bmleh.de/SharedDocs/Downloads/DE/_Ernaehrung/Lebensmittel-Kennzeichnung/LeitsaetzeFleisch.html) mention milk, yogurt, and egg among customary additions to döner. That is composition guidance for a product name, not an allergen sheet for a restaurant. US menus do not use those naming rules in the same way. The ingredient statement or the shop's current allergen information is the evidence.

## Gluten is in the bread — and sometimes not only there

Conventional [bread](/bread/) is wheat. Dürüm sheets are wheat. GDK's sesame waffle bread is wheat. Seitan, used at Berlin's Vöner as described on the [city guide](https://www.berlin.de/en/tourism/insider-tips/7409762-5766508-berlins-best-doner-kebab.en.html), is concentrated wheat gluten that can look like shaved meat.

Meat is a separate check. Some formulations contain wheat; some do not. In August 2026, [Döner Haus's public site](https://doner.haus/) described its meats as filler-free and gluten-free — an operator claim about its own product, not a category fact. GDK's [current US allergen page](https://www.gdk.com/us/allergen-information) states that gluten is used and that handling creates a risk of unintended cross-contact, so it cannot guarantee allergen-free food.

A bread-free [box](/the-doner-box/) removes the loaf. It does not remove wheat in a meat formula, a sauce, a shared knife, or a fryer that also cooks breaded food. For celiac disease, ask the location about the exact meat, sauce, utensils, and oil. If staff cannot check written information, choose another meal.

Bavaria's food-control [döner leaflet](https://www.lgl.bayern.de/downloads/lebensmittel/doc/merkblatt_doener_kebab.pdf) is one German example of why names matter: products with breadcrumbs or other additions may need a more specific designation there. That leaflet is not a US menu.

## Dairy, egg, and the word "white sauce"

[Sauces](/sauces/) are where dairy and egg hide behind color. Yogurt-garlic contains milk. Tzatziki contains milk. Feta and halloumi contain milk. A mayonnaise-style sauce may contain egg. Toum, a garlic-and-oil emulsion common with shawarma, is typically dairy-free — but a Berlin "Knoblauchsoße" may not be toum. Tahini is sesame, not dairy.

[Kotti's menu](https://www.kottidoner.com/menu) says orders include red and white sauces. GDK names garlic, yogurt, and spicy sauces on its [UK OG page](https://www.gdk.com/gb/menu/gdk-og-kebab). Döner Haus's East Village menu describes a creamy garlic sauce and a spicy sauce. None of those names is an ingredient list.

## Sesame is on the loaf and in the sauce

Sesame seed on pide is visible. Tahini in a vegan garlic sauce is not. Nigella seed is a different plant, but customers still need the shop's own information rather than a visual guess. If sesame is the concern, ask about bread *and* sauce *and* spice mix.

## Cross-contact is the question shops under-answer

Even a meat formula with no wheat can be carved on a board used for sandwiches, pressed in a grill that toasts bread, or finished with a knife that just cut pide. Fries can share oil with falafel or breaded items. A vegetarian patty can share a fryer with dairy, as GDK's UK plant-based kebab page notes for its own oil.

- *Enthält das Weizen, Milch, Ei oder Sesam?*
- *Gibt es Kreuzkontakt?*
- *Ist die Fritteuse gemeinsam?*

In English, name the allergen and ask whether current written information exists for that location. GDK tells customers with allergies to speak to the team before ordering. That process is more useful than a category-wide promise this encyclopedia cannot make.

## Halal is not an allergen answer

[Halal certification](/meat-and-halal/) concerns Islamic permissibility. Wheat, milk, and sesame can all be halal. A halal logo does not mean gluten-free, dairy-free, or free of cross-contact with those foods. Keep the certificates and the allergen sheets on separate mental lists.

## A short checklist before you order

1. Name the allergen, not the diet slogan.
2. Ask about meat, bread, sauce, cheese, and fryer as five items.
3. Ask whether staff can check a current written list for this location.
4. Treat "no bread" as one change, not a clearance.
5. If the answer is a shrug, walk away. A missed sandwich is better than a guess.
