# A guide to German döner

What is a German döner? A German döner is the Berlin-style version of the Turkish döner kebab: seasoned meat stacked on a vertical rotisserie, shaved thin, and served in toasted flatbread with crisp vegetables and signature sauces. Created by Turkish immigrants in 1970s Berlin, it turned a traditional kebab into a portable, vegetable-loaded sandwich that became Germany's most popular fast food.

It is not a gyro. It is not shawarma. It is not a 1,400-square-foot dining room.

The United States already knows vertical-rotisserie meat. It does not yet have the German shop: small, standing, spit in the window, sandwich as the product. Americans already eat gyros and shawarma. Authentic German döner is still rare. That gap is the whole story, and it is what the chapters below work through.
