# Sides and fries

A döner meal is often just the sandwich. It is also often the sandwich plus fries, a salad, extra bread, or a drink. There is no official German side dish and no rule that fries belong inside the bread.

The distinction that matters is whether the starch is a **side**, a **base**, or an **ingredient**. Fries in a paper cone next to a pide sandwich are a side. Fries under shaved meat in a [döner box](/the-doner-box/) are a base. Fries inside a gyro pita are an ingredient of that sandwich tradition, not a requirement of Berlin döner.

## What actually appears beside the sandwich

[Berlin's city guide](https://www.berlin.de/en/tourism/insider-tips/7409762-5766508-berlins-best-doner-kebab.en.html) notes that snack bars serve döner "and other specialties such as lahmacun, dürüm and falafel." That is a description of a mixed grill-shop counter, not a mandate that every Imbiss carry the full list. A tiny window may sell only sandwiches and drinks. A seated restaurant may send bread, salad, and grilled vegetables with a *Dönerteller*.

## Fries: side, base, or spectacle

Fries travel well with döner because both are hot, salty, and fast. They also change the meal more than most toppings. A small cone is a snack; a box of meat over a full portion of fries can exceed the sandwich in energy. See [calories](/calories/) for why the title "box" does not disclose the number.

Current operator pages make the range concrete:

- Döner Haus's [East Village menu](https://doner.haus/menu/doner-haus-east-village) lists boxes with fries, salad, fries and salad, or rice, and treats loaded fries as their own build.
- GDK's [US directory](https://gdkusa.com/) lists regular, curry, flaming, and cheese fries, plus a doner box with fries and a doner-fries-and-cheese item.
- [DonerG](https://donerg.com/) advertises "Turkish Street Fries" as seasoned fries with Mediterranean sauces, and its "Original Fladenbrot" build includes fries *inside* the bread with tomato, parsley-onion, pickles, red cabbage, and sauces.

DonerG's stuffed-fries sandwich is a documented Turkish-American choice, not a Berlin default. Putting fries in bread is familiar from some Greek gyro plates and from some UK kebab shops; it is not the salad-forward Berlin pocket described on berlin.de. All of those builds can be good. They are not interchangeable.

## Salad is not automatically "the healthy side"

The Berlin sandwich already carries a vegetable layer — cabbage, lettuce, tomato, onion, cucumber in the city guide's familiar set. Ordering extra salad as a side can mean a dressed bowl, a sheep's-cheese salad, or simply more of the same chopped mix. Roasted vegetables, as at shops the city guide flags for *Gemüsekebap*, are a different item: cooked, often oily, sometimes with cheese.

A salad box removes bread only if the base is greens rather than fries or rice. Sauce and meat portions may stay large. Vegetarian salad is still not vegan if yogurt sauce or feta is included. See [vegetarian](/vegetarian/) and [allergens](/allergens/).

## Bread on the side, and other counter extras

A *Dönerteller* may include bread even when the meat is not inside it. Extra pide is ordinary with plated döner in Turkey and in German restaurants. Sesame on that loaf is an allergen, not decoration.

Other extras belong to the wider kebab-shop menu rather than to "German döner" as a protected set: stuffed vine leaves, grilled peppers, shepherd's salad, or a slice of baklava. If they are not on the board, they are not part of the meal. Do not expect a national pairing list.

## Shared oil, shared meaning

Fries look like a gluten-free side and often are not safe for celiac disease. Breaded items, dürüm offcuts, falafel, and chicken can share a fryer. GDK's [current allergen page](https://www.gdk.com/us/allergen-information) warns that its preparation methods create cross-contact and that it cannot guarantee allergen-free food. Ask *Ist die Fritteuse gemeinsam?* — is the fryer shared? — rather than inferring from the word *Pommes*.

Halal status of fries follows the oil and the shop's controls, not the potato. A halal-certified meat spit beside a fryer used for non-halal items is a premises question, not a vegetable question.

## How to order sides without guessing

Useful German phrases:

- *Mit Pommes, bitte.* — With fries, please.
- *Pommes separat.* — Fries separately (not inside the box, if that is an option).
- *Einen Salat dazu.* — A salad with it.
- *Ist Brot dabei?* — Is bread included?
- *Kleine oder große Portion?* — Small or large portion?

On English menus, read whether fries are included, upcharged, or the base. A "box" that already sits on fries does not need a second order unless you want them. A sandwich described as coming "with salad" may mean the filling, not a side bowl.

Sides are how a focused spit menu becomes a meal. They are also how calorie, allergen, and format claims quietly change. Treat them as named items.
